White wine should be chilled for approximately 2 hours in the fridge (55o-60oF) and red at a "cool room temperature" (62o-67oF or 30 minutes in the fridge). Serving the wine too cold or too warm can affect aromas and flavors.
A general rule of thumb is each standard 750ml bottle serves five glasses. Depending on the length of your soiree, two to three glasses per guest should suffice.
