Preheat oven to 450°F.

Fry bacon in a large skillet until crisp; transfer to paper towel and set aside. Drain grease and wipe out pan with paper towel.

In same skillet, heat olive oil over medium heat. Add shallots and garlic. Sauté for approximately 2 minutes or until softened. Add tomatoes and vinegar. Cook over medium heat until liquid has reduced and sauce thickened. Season with salt and pepper. Keep sauce warm.

Sprinkle crust with parmesan cheese. Bake 10-12 minutes or until cheese has melted. Spoon tomatoes over cheese; top with bacon pieces.

Stir crème fraiche until it has softened to a thin, creamy consistency. Drizzle over pizza and garnish with freshly minced parsley.

Slice and serve with a glass of your favorite Cavit Cabernet Sauvignon!
