Cook bacon, remove from pan. In reserved bacon drippings, wilt spinach.
Remove spinach from pan, add chopped red onion and 1 tablespoon sugar to pan and cook 8 minutes until caramelized. Melt butter in separate sauce pan and sauté chopped garlic until fragrant. Add flour and salt and pepper until it forms a paste. Slowly add milk with whisk and cook over medium heat until thickened. Put that sauce over fresh dough, then cover with spinach, caramelized onion, freshly grated parmesan and top with crumbled bacon.
Cook for about 8 minutes at 400°F.
Slice and serve with a glass of your favorite Cavit Cabernet Sauvignon!
